Well, how has everyone's hunt been thus far?
Out of four days in Salamanca - I took one doe, not a bad size about 120 lbs dressed. Very tough hunting. Hadn't had a shot until opening week thursday.
I didn't see any big bucks...
Opening week Saturaday I finally took a big bodied buck at a place in Middlebury, 4-point but it dressed out - about 150 lbs. Not huge but it does help to fill a freezer and some to share with family and friends.
Anyone else ?...
My husband has 3 deer, I think. A buck, a doe and a bambi- can't wait to try young deer meat, have never had it!

Oh, you are gonna love it! I already have 30lbs of sausage made and pretty soon I will have time to make deer jerky yummm...
I have never tried deer sausage or deer jerky. I mainly like the roasts, steaks, and tenderloins. My husband likes to be creative with the burger and make meatloaf, and burgers, but I dont care too much for the burger. I am not a big fan of sausage, but I do like polska kielbasa (probably the fattiest of all sausage!!)
I'd like to try one of the recipes from the venison book sometime, we have a woman on our rez who is known for making awesome stews and stuff with the deer meat. Bubs even suggested using it in corn soup (I like pork-the at gives the soup flavor)
If anyone would have a good recipe, it would be blackbear, I have trried a few of her recipes, and they always come out delicious!!
Deer recipes, Blackbear?

Glad to hear a few people have been lucky this year. I started working 3rd shift and decided not to hunt this year. Figured the deer needed a break :rotfl:

When my wife saw those prices, she told me next year I better be hunting. YES!!!!!!!!!!!!! Now when she complains, I just have to pull up that webpage. No more why where you gone all weekend!!!! :thumb: :thumb:
Is "legal" deer meat (to serve in restaurants) really expensive? One time I was looking at a menu of a 4 star restaurant and the deer costs as much as prime cuts of beef!

well it's expensive over here Sanj, even in butchers shops (when you can get hold of it!) so much so I've never eaten venison, around £7 english pounds a lb, whats that, around $14 dollars? and we can't hunt them here (legally) the thought of packing a 150lb deer on my 5'2" frame doesn't worry me, I can do that ( i'm a woman ! i go grocery shopping without a car) but never having held/fired a gun I just know I would probably end up shooting myself in the bum. Don't the government hire men to go out and legally cull the deer herds in New Zealand? would any of you men like the idea of just goingoff for days weeks at a time in the wilds to just hunt?

:rotfl: MAO.....trotters are WAAAAAAAYYYYYY lower Bear...lol pigs trotters- pigs feet! it used to be considered something of a 'delicacy' a few years back when nothing was wasted of an animal, another (disgusting to me) thing was sheeps brains...excuse me while i retch, all kinds of 'offal' were eaten erm heart, 'sweetbreads' are what maybe you were thinking of, am I missing out on something here?:hehehmn: my mom and dad would buy the tripe cleaned then braise (broil?) it slowly in milk and onions. I could never keep that down...suppose it's the same in most places in a 'country' area if you kill an animal its not just for food but everything gets a use/ serves a purpose skin, sinew, bones.
think I prefer your kind of 'trotters' though Bear!:) take care Liz

Oh same here still... yep have seen but never tried pickled pigs feet.. a southern delicasy. I'm not one for eating feet LOL! But I do go through periods where I am craving nothing but hot pork rinds (fried skin).

oh I love those! here we call them 'scratchings' eat them cold usually with a cold beer and pubs sell them! especially the area I comefrom/live in ! mind you the salt we have on them doesn't do us any good. Think that we could have a lot more dishes in common just known by a different name, mind you if I speak of a local dish we have here in the 'black country'(named in victorian times mostly from the smoke from factory chimneys in industry, and the mass of coal mines we had) 'faggots and peas' you would probably wonder what we had on the spit roast:roflmao:just in case anyone does want to know a faggot is a kind of big meatball made out of some part of sheep and wrapped in an intestine and grey peas the hard kind you have to soak overnight. With this wonderful (ha ha) cuisine is it no wonder we eat so much indian, chinese, italian, etc lol
take care Liz.....this is making me hungry!
